Zucchini Pizzas

One of my new favorites, inspired originally by Kalyn’s Kitchen. It couldn’t be more simple: slice zucchini into thick horizontal slabs, maybe half an inch thick, brush on a little olive oil, and grill or broil until tender (I stick a fork in them while they’re still in the oven.) Then, top with your favorite toppings (I do mozzarella, homemade sauce, salami or pepperoni, mushrooms, and olives) and broil until the cheese is doing that wonderful golden cheesy business, just a few minutes.
